Mango Creme Brulee

Ingredients:

• 1 cup FRULPA Mango puree
• 1 cup cream
• 4 egg yolks
• 2 tbsp. sugar
• 4 tsp. Sugar for the topping

Preparación:

• Preheat oven at 325°F.
• Place the Frulpa Mango puree with cream in a small saucepan and heat over medium heat until cream starts to boil.
• Whisk egg yolks and sugar in a bowl.
• Slowly whisk in the egg mixture in the boiled mango until smooth.
• Place 4 ramekins in a deep sided baking dish half filled with boiling water.
• Divide mixture between the 4 ramekins.
• Cover baking dish with foil and cook for 40 minutes or until custards are set.
• Allow to cool, then refrigerate.
• To Serve: make the brulee topping by sprinkling a teaspoon of sugar over each custard and caramelize the sugar using a blow-torch or by placing custards under a hot grill until well browned. Serve immediately.
