Passion Fruit Cheesecake
Ingredients:
• 150 g sweet biscuits (vanilla cookies)
• 70 g melted butter
• 500 g cream cheese at room temperature
• 200 g sugar
• 3 eggs
• 200 ml FRULPA passion fruit puree
Instructions:
• For the crust, using a food processor, process the biscuits and add the butter slowly until everything is combined.
• Put the crust mixture into a pan, using your fingers or the back of a spoon press it. Cover the pan with plastic wrap and put it in the refrigerator.
• Preheat your oven to 325 degrees Fahrenheit.
• Beat the cream cheese and 150 g of sugar until is smooth. Add the eggs one at a time and half of the passion fruit puree.
• Get the pan off the refrigerator and pour the cream cheese mixture on top of the crust, and bake for about 1 hour minutes or once cheesecake is set in the center.
• For the passion fruit topping, in a saucepan mix the another half of passion fruit puree and 50g of sugar, let it cook over medium heat until it starts to thicken.
