Pork Loin With Tamarind Sauce
Ingredients:
• 2 cups of FRULPA tamarind puree
• 1 small pork loin
• ½ onion
• 1 garlic clove
• 1 Chipotle chili
• 1 Tbsp. vinegar
• 1 Tbsp. sugar
• Salt and pepper
Instructions:
• Preheat oven to 180°C.
• Place the pork loin in a roasting pan and season with salt and pepper.
• Blend the remaining ingredients until a homogeneous sauce is obtained.
• Pour the sauce over the loin and bake for 1 ½ hours, bathe the loin with the sauce every 20 minutes.
• Remove from oven, let rest 10 minutes and serve.
